Dehydrated Hashbrowns

I bought a pack of hashbrowns last night and wanted to try dehydrating them as I read there were some of you doing this. My question is.. How do you know when they are done? What test do you use?

No test. They just have to be good and dry. You have to let your trays sit for a while to make sure everything is at room tempurature. THEN try to breeak a few pieces and you can see if you need more time or not. It snaps, its done. Its flexible, needs more time drying. This is for potatoes, mind you. Semi flexibile is okay for something like fruit rollups, but not potatoes. they need to dry hard.

I like my dried hash browns-they stay white unlike trying to do your own potatoes.

Straight to the trays? Yes! They are blanched & treated to stay white for the freezing so you dont need to do anything except throw them on the trays and spread them out. You will be surprised at whats left-looks like hardly anything they shrink up so much.
I haven't had a chance to rehydrate some of mine yet. I did read that you need to let them sit in warm/hot water for at LEAST a half hour to rehydrate them enough to prepare them. Maybe I will try a batch tomorrow morning for breakfast and see ....

You can buy them in bulk and they are cheap We've got Gorden Foods up here which is a bulk institutional and restaurant supply house and you can buy a whole case for around $35. They come in boxes about the size of a #10 can. Simply rehydrate in water for about an hour and grill them up like you would fresh. Most restaurants use them instead of fresh unfortunately. I just had some tonight. You might not have a Gorden's around but I would almost imagine any of the big box stores would have them or something similar available. And they last a long time even in the cardboard containers..At least 4 to 5 years or longer.

Rehydrate your potatoes for about half an hour, drain well, heat skillet with butter or bacon fat and put a big spoonful on the skillet. Shape into a patty and let it set till it's golden brown before you turn them. Add more butter if you need to when you turn them and brown the second side like the first. That will make you some very nice patties. If you want O'Brien Potatoes, add some onions and bell peppers to the mix and fry like you would regular fried potatoes and brown, turn, brown, turn etc.

My DH loves his dehydrated taters. they don't bother him like fresh do.
