Dehydrating canned veg.

I ask this question on another forum and all I got was put them in the freezer.

I have some #10 cans of corn and hominy. There are only the two of us to eat it. When I open them can I dehydrate the left overs? I have a freezer but it is full and I would like to not take up space with this kind of stuff.

If anyone has ever done this, did it work. I'm think of just opening a small can of something and dehydrating it to see how it works. If it does then I could do lots of my caned veg. like that and save space.

I make sure my dehydrated stuff is completely dry. Let cool and pack in a canning jar. I have a seal n pump so that is what I use to seal it with. Nothing has gone moldy yet. Then I store in a cardboard box so it is dark and store in the cool basement.

Just to add that I have done canned grean beans like this and it was fine. So I am sure you could do any canned veggies as long as they are real dry.

I've done green beans and they did fine. Thinking about doing corn in small can just to see if I like it. I really liked doing fruit cocktail. Start with small cans and see what you like then go for the bigger cans! They do indeed take up less space. I have the one gallon jars that pickles come in that I keep my dried stuff in. I thin slice raw carrots and they are really good too dehydrated.
