Abundance of green bell peppers

What should I do with all these peppers?
I've dehydrated some but am still sitting with several pounds in my refrigerator. I'm going to make gumbo and freeze it this weekend but I need more ideas...help!

Southern by choice
I just chop up our extras and put them into a ziplock bag and put them in the freezer. Then you can take out what you need for cooking later.

Just keep dehydrating them... they'll keep for years in a glass jar in a cool, dark place.

Freezing works fine, but they don't store anywhere near as long. I save the freezer space for items which don't dry or can well.

I wish I was closer to ya, Miss Tina! I would take some of those off your hand. I usually don't plant any because people usually give them to me by the truck load. And I hate to see them go to waste. But not this year!!!! Same with zucchini. But nary a one have I been gifted with this year. Maybe more people are prepping than are letting on.

Stuffed bell peppers are awesome and there's a million different recipes for them if you google. Just pick one that appeals to you. I made alot of Italian stuffed bell peppers and froze them individually with my vaccum sealer. Great for a fast meal or lunches at home. I also used a bunch of them canning salsa this year. Freezing and dehydrating are also great choices.

I chop my peppers and pack them tightly in ice cube trays, fill with water and freeze. Then I pop them out and put them in freezer bags. Each cube is about a fourth of a small pepper.
