Sweet Chunk Pickles

Sweet Lime Pickels

7 lbs cucumbers, medium slice
2 cups of pickling lime
2 gallons of water
Soak 24 hours
Rinse
Cover with ice for 3 hours, drain
Cover with the following:
2 quarts of white vinegar
4 1/2 lbs sugar
1 T. salt
1 T. celery seed
1 T. whole clves
1 T. pickling lime
Soak overnight
Boil gently 35 minutes
Jar and Seal

Oops! I left out the vinegar

After soaking, rinse
Cover with ice 3 hours, drain
Cover with 2 quarts of white vinegar
Then the rest of the ingredients.

I have a recipe for freezer pickles. If you are interesed, I can post it on this thread. I used to eat the hell out of these pickles when I was pregnant! And no, it wasn't with ice cream either lol!

These take a long time to make but their so good !! I make them every year.


Sweet Chunks

10 med. pickling cukes ( 5lbs approx )
8 c. sugar
4 c dark vinegar
2Tb pickling spices
4 t salt

Pour boiling water over cukes each day for 4 days. On 5th day, drain and cut into bite size chunks. Combine remaining ingredients and bring to boil then pour over chunks. Cover and let stand 2 days. Then bring mixture to boil(full) and add to hot sterilized jars to 1/2 in of top and adjust lids. Hot water bath for 5 minutes. Mates 6-8 pints.


Edited to add: I do boxes of these at a time and adjust the ingredients to such. I just try to adjust the other ingredients, double, triple, whatever to how many cukes I have to cover them. I've been canning for almost 30 years so that's just how I do it but the basic recipe above is what was given to me 15 years ago.
