Does anyone have a tried and true good watermelon pickle recipe?
The following was my mother's recipe for pickled watermelon rind:
Pickled Watermelon Rind
Makes about 5 quarts
1 large watermelon
Cut before peeling and remove the green skin and pink flesh. Dice the rind into 1-inch cubes. Parblanche until it can be pierced with a fork, but do not overciik. Drain. Place in large bowl.
Pickling syrup for the rind:
7 cups sugar
2 cups vinegar
1/4 teaspoon oil of cloves
1/2 teaspoon oil of cinnomon
Bring above ingredients to a slow boil. Turn off heat and poor the syrup over the cubed rind, making sure all is well covered. Place in the refrigerator and let stand overnight. Remove the rind, reboil the syrup and pour it back over the rind. Again, let it stand in the refrigerator over night.
On the third morning, pack rind in sterile jars, boil the syrup again and pour over the rind. Seal and store.
