Looking For Flax Seed Meal Bread Recipies

My wife and daughter went back on the Atkins low carb diet again.

Good news is that by holding to 25 carbs a day they have both lost 8-9 pounds in just over a week.

Even I lost a few pounds because all the snacks have not been replaced.

The bad news? There is soon going to be a riot if we can't find a low carb alternative to bread or crackers.

My wife tried a recipie for Rosemary Focatchia bread (Italian flat bread) made from Flax Seed Meal ($3.15 a pound sound OK?) today.

Less than one carb a serving with 5 grams of fiber.

Well ... it looked and tasted like Astro Turf.

We are about to experience a domestic bread riot.

Do you have a whole foods nearby? We have a Harry's owned by whole foods & I get my flax seed (which I grind myself in the blender) for $1.69/lb bag. It's brown organic flax seed.

Can't help you on a low carb bread though.

I checked and Milwaukee has a Whole Foods on North Prospect Ave. near UWM.

They may throw me out when I ask for a pack of Luckies, a box of .357 Mag. and a 12 pack of Blatz. :-O

Serving Size: 1

1/4 cup flax meal (or finely ground almonds)
1/2 teaspoon baking powder
1 packet splenda packet
1 teaspoon cinnamon
1 large egg
1 teaspoon butter, softened a bit

Put the dry ingredients in a coffee mug.

Stir.

Then add the egg and the butter. Mix well (get the dry ingredients at the bottom of the cup mixed in).

Microwave 1 minute (more or less, depends on the microwave). Take out. slice, butter, eat.

Cream cheese goes nicely with it, too.



11.1 total carbs, 8.8 fiber, for 2.3 net carbs



I was skeptical before I tried this, but I was pleasantly surprised it was so good and gives me the "bread fix" I need sometimes. You can leave out the splenda if you don't use or like it. If you like to try new things, you can mess around with the recipe a bit, adding different spices, a dollop or so of pumpkin, etc. :)

Paul Stitt is the chemist who founded

Ovens of Manitowoc. He spent a lot of time figuring out how to make bread with flax seed. His book, Beating the Food Giants, is available free online and I think it has some recipes for flaxseed bread.
