To make your own powdered eggs, scramble three eggs and cook in a saute pan. Break up the eggs into small pieces and place on a solid sheet. Dry at 135 degrees F for approximately ten hours. Powder the dried pieces through a blender.

Thank you for this valuable information. I know this is probably a dumb question but how are they stored afterwards?

No question is ever dumb, Emily...they are avenues that we more easily travel to our destination of knowledge.

I haven't tried dehydrating eggs as yet but when I do I will probably put them into mason jars, add an oxygen absorber, and seal or use up all the small size mylar bags that I have on hand.

Oh, thank you soooo much. I was wondering how to do that.

Have you reconstituted them yet? If so, what are the ingredients to add to do so and at what ratio powder:ingredient?

Cag, I haven't as yet powdered eggs, it is on my To Do list but wanted to share the information that I found. However, here is what Honeyville has to say on reconstitution:

"To reconstitute one egg, mix 1 Tablespoon of powdered whole egg with 2 Tablespoons of water. Use for any recipe that calls for eggs. When using with other dry ingredients, it is not necessary to reconstitute egg. Simply add to other dry ingredients and increase water measurements in mixture to necessary amount."

Perhaps someone can try this to see how it works and report back...I'm in the process of moving my herb gardens to another area and won't be able to get to this for some time.

Can you do more than 3 eggs at a time? I have an American Harvest dehydrator with 9 trays in it. Seems wasteful and silly to run it that long at that temp for 3 eggs.
