FOOD Oh My God!!!

So I'm in the middle of pressure canning last years left over elk and venison to hopefully make room in the freezer for this years venison. I had some left over meat and broth, hadn't made dinner for myself yet. So I threw collard greens, chard, hominy, peas, sun dried tomatoes, onion garlic, thyme, salt and chiki powder into the pot along with a box of whole wheat macaroni shells.

No I wish I had made a huge pot of this and pressure canned it instead of just the meat. This is absolutely amazing.

I'm gonna call it "Necessity Soup" since I wasn't in the mood to eat, but knew it was necessary to use all that God had blessed me with.

I'm hoping to have this problem myself soon; heading up to the Rockies on Sunday for 4 days of Elk hunting. I'm hoping I don't have to eat tag-soup again this year!

The soup sounds delicious. Good luck hunting guys. Hubby leaves soon for antelope, no elk tag this year.

Sounds like a super soup, to be sure!!!

Round it off with some cornbread and ice tea and life couldn't get much better ! :D

Unless you had room for dessert and topped it off with fresh peach cobbler ;)

DH is leaving in the morning for a gator hunt then off to the camp for more hog depopulation. I've been doing somewhat the same thing Johnny except I'm creating meals with what's occupying the most space. I had turkeys occupying alot of room so I took one and deboned it and stuff it into a turkey roast which reduced the bulk considerably without the bones. We took another one and invited everyone over for dinner Monday night for Turkey pot pie. I have alot of veggies in there that I'm trying to incorporate in our daily meals. DH is a chef and does alot of the cooking but instead of grabbing from the freezer he runs out to by fresh. For now I've taken back over the cooking so that I can get this food used up and clear out these freezers.

That sounds like an excellent soup to make and eat but would be GOD AWFUL IF CANNED. Just can the meat and make the soup later. Otherwise the macaroni and hominy overhydrate and would try to dissolve and would make it semi-solid SLIMY solid, instead of soup. The spices would become overpoweringly strong, over time, if canned.

Actually, it's entirely possible to can soups with pasta (not so sure about the hominy!) and have them turn out great. I do gallons of chicken noodle soup every fall. The trick is to add the noodles (orzo work really well) at the VERY end of making the soup... add them to the boiling soup, then *immediately* put into jars to can. It will cook during the canning process, but not overcook.

Same thing works well with rice.

summerthyme... where do you buy your Orzo noodles?

I have been all over our fair size town and no go.

I've always been able to find them at our local- smallish- supermarket.

You can get it through Amazon, although it will cost you about $2 a pound shipped. But these days, that's not as terrible price as it used to be... I think regular price is around $1.29 a pound now, but I bought 50# when I found it on sale for 50 cents a pound awhile back, so I'm not sure.

I had a couple of 5 lb bags of mixed vegetables (broccoli, cauliflower, and carrots) from Sam's. I pickled the veggies from one bag--turned out great! I 'raw' packed the veggies from the other bag and it turned out great, too.

I can my chicken stew with homemade egg noodles, the noodles come out perfect canned. I think it is because the homemade noodles have a lot more egg than the store bought. I use a half cup of flour per egg.

HERE IS A TIP for you who make big pots of noodle soup to eat over two or three days.

INSTEAD of using egg noodles, USE LINGUINE PASTA and break it up noodle length. It won't OVER-soften and get slimy after a night in the fridge like regular store bought egg noodles.

I hear you, last time we went, had only four point licenses, scoped 121 does and 13 cows, nary a horn.
Use to hunt near Rifle, CO.
