One of my favorite holiday treats!

Pepperkaker - Norwegian Spiced Almond Cookies

1 cup + 2 tbsp. butter
1/3 cup molasses
2 1/2 cups icing sugar
3 cups flour
2 tsp. b. soda
1 tsp. cloves
1 tsp. cinnamon
2 1/2 cups chopped almonds
3 tbsp. cold water

In a small saucepan over low heat, melt butter, then add molasses and sugar. Heat to a low boil and boil 2 minutes. Cool, then combine dry ingredients and add into the batter. This is a stiff batter. Stir in the almonds and water. Mix well.

Form into 5 or 6 logs approximately 2" in diameter. Wrap and refrigerate several hours.

Preheat oven to 350 F, then slice thin approximately 1/8" thick and place on a greased or parchment lined cookie sheet. These do not spread so you can place them fairly close to each other.

Bake 350 for 10 minutes.

Some people make them even smaller - 1" or so and then package them in jars tied with a pretty bow and give them as gifts.
