    6 Homemade Horseradish Relish

    Have about three pounds of horseradish from the garden.....don't know what else to do with it, soooooo.......
    Today I am going to be making horseradish to can.....I will let you know how it comes out!!

    Open windows, lots of fresh air, and if you have asthma or breathing problems... you probably don't want to be messing with it!

    Are you pressure canning it, or putting it in vinegar? I don't think I've ever heard of preserving it by canning... drying, or grating into vinegar and then storing in the fridge, yes...

    HMMMM.....none of it was hot except for the two big roots. All the rest were small; about 1/2 inch in diameter. But had two BIG ones about 3 inches across and about 4 inches long. Grated the two big ones, and actually not very hot......oh wait, got into the inner part and it is BLAZING!! But GOOD!! Pickled in a bit of vinegar and sugar and salt....using recipe here:

    Didn't water bath it, there wasn't enough, about two 1/2 pints after it cooked down......it is AWESOMELY GOOD!!

    I can see how it would burn your eyes and lungs if it was very much, but I just got my sinuses running good!!

    The greens are good eating too, while the plants are growing in the summer. Mom and I used to strip off one side of a leaf and add it as a garnish to our salads. It was *really* good, with just a little bit of zing to it.
