    Classic Whoopie Pies

    Ingredients:

    Shells:
    1 stick butter
    1 cups sugar
    2 eggs
    1/2 teaspoon vanilla
    1 cup milk
    2 cups flour
    1/2 cup cocoa
    1/2 teaspoon baking powder
    1 1/2 teaspoons baking soda
    1/2 teaspoon salt


    Filling:
    2 tablespoons unsalted butter, softened
    1 1/3 cups powdered sugar
    2 tablespoons milk
    1/8 teaspoon vanilla extract


    Directions:
    Preheat oven to 350° F. Combine flour, cocoa, baking powder, baking soda, and salt in a medium bowl. In another large bowl, cream together butter, sugar, eggs, and vanilla. Slowly add milk and mix well. Sift dry ingredients into creamed mixture. Drop batter by the teaspoon on parchment lined cookie sheets, about 2 inches apart, and bake for 10 minutes, or until springy to the touch. Cool on baking sheets for 5 minutes, then place on wire racks to cool completely.


    To make the filling, combine the butter and powdered sugar in a mixing bowl and beat at low speed until crumbly. Mix in extract and milk until combined, then switch to high speed and beat until light and fluffy.
    Spoon some frosting onto one shell and gently smash another onto it to form a sandwich.

    These are my weakness. I've found that the best tasting ones are made by the Amish and Mennonites for some reason. I don't know how their recipes differ but apparently they do in some way. Theirs is always so much better than other folk's.
    Can't stand the red velvet ones tho. *shivers*
    And the peanutbutter filling ones are VERY rich and can be a little too much. lol I have to be really craving one and have a big cold glass of milk to eat one.
    I also don't like the vanilla cake ones. I'm a chocolate girl thru and thru lol

    Ill have to save this page. My hubby would love them I am sure. I used to make them all the time when our 5 kids were living at home. I haven't made them for a long time. Thank you Susan for the recipe and beautiful picture to remind me to make them.

    Using lard for some of the butter? (Don't really see a reason to do that, but that was the first thing that came to my mind.) Maybe cream instead of milk? Maybe it's the "real" milk?

    These look great and if my oven worked, I might make some for my child. Poor little thing hasn't had anything mommy-baked in years. haha. It is kind of sad, but I guess she'll live through it.
